Quick and Easy Cream Scones



Every cook needs a few quick and easy recipes that can be whipped up in an emergency. These scones from the Country Women's Association of Australia (CWA) are both economical and easy to make in a hurry.

They are delicious served buttered with jam (jelly) or with golden syrup or lemon butter. If you serve them with whipped or clotted cream and jam you have a traditional cream tea.

Don't forget to boil the kettle!


Easy Cream Scones

3 C self-raising flour (about 375 g)

1/2 t salt

125 ml cream (4 fl. oz)

250ml (approx.) milk (8 fl. oz)

Sift flour and salt well. Pour in cream, then milk, and mix with a knife. Use sufficient milk to make a firm but not dry mixture (just enough milk to make dough easy to handle without too much extra flour on the board). If mixture is too gooey add a little extra sifted flour.

Roll out one way lightly to 12 mm (1/2 ") thickness; cut with 5 cm (2") cutter and put on a greased tray. Place them in a block with sides touching as this helps the scones to rise well; you pull them apart once they are cooked.

Bake in hot oven for 8-10 minutes. Brush tops with melted butter.

(Hot oven 220 degrees C, 430 degrees F).

Makes 18.

Those do look yummy, and I'd love to try them. I'm wondering exactly how to convert those to American measurements. Maybe, my dear hubby, the engineer, can help me figure it out. Thinking in metric is not my strong suit.

Kate, your bedroom looks beautiful. Did you see you caught the bottom half image of one of your helpers in the mirror! I often wish our bedroom wasn't so messy, but I realise that simply wishing won't change it. BTW: the scones look great and I'm flying off immediately to make a batch for an afterschool treat. I put my scones in a swiss roll tin, that way the edge ones don't fall over, they bake just as well. I'll be making these for a weekend treat.

Chloe and I just made a batch of these. With the kitchen at the cafe well stocked, our home larder is oft' bare. I had some long life cream which was out of date... still fine! Just enough flour and the milk. We didn't bother with the salt. They came up a treat! I'm a scone snob and usually only follow my fathers famous scone recipe with lots more fiddling round. These came up as good (maybe better, but don't tell dad).
