A Soft Boiled Egg for Breakfast

Sometimes nothing else will do, and all I want for breakfast is a soft-boiled egg with toast soldiers -- preferably served with a glass of freshly-squeezed orange juice. On days when I am tired or unwell, or simply in need of more real nourishment than cold cereal can provide, an egg with toast soldiers always hits the spot.

An egg with toast soldiers has always been one of my favourite comfort foods. Others include freshly made chicken noodle soup and oozy, starchy risotto.

Part of the satisfaction is preparing my egg in the same way every time.

First I boil enough water in a small saucepan to cover an egg (or eggs). I reduce the heat to simmer, gently deposit my eggs in the water using a spoon, and set my kitchen timer for 7 minutes.

For the next 2 or 3 minutes I squeeze my juice using my old-fashioned hand juicer and collect my dinner plate, egg cup, knife and teaspoon.

I then pop 2 or 3 slices of bread in the toaster and wait.

By the time the timer goes off for the egg, the toast is ready to be buttered, and my meal can be assembled. I like my egg to have a soft yolk and a firm (not watery) white. Seven minutes is the perfect length of time to produce such an egg, assuming the egg is around 60 g (2 oz).

I then take my breakfast to the table and enjoy several minutes of blissful eating. Delicious.
Do you have a favourite comfort food?

I ate a soft-boiled egg or two every single day of my pregnancy. I didn't care that it was on my list of no-nos. It didn't make me throw up. I love soft-boiled eggs. Yum.

That sounds yummy. I make this same meal for my kiddos when they are starting to mend after a stomach bug. Something about the toast and egg makes them feel better. It is one of our favortie comfort foods, my kids will ask for it when they are sick. (I usually have the requirement that they have to keep soda crackers and Sprite down for several hours before they get the egg!)

My grandma used to make me soft boiled eggs all the time. I absolutely loved them. I haven't had one in years....unless you count the hard boiled ones that didn't get quite done that I still ate after I peeled them....

Ya know something, my favourite comfort breakfast food is a piece of homemade wholemeal bread, toasted with real butter and raspberry jam, along with a really hot cup of white tea.

Pretty simple aren't I?!

My favourite way to have eggs though, is soft poached.

Wow....very cute title for toast...."Toast Soldiers"...never heard that expression before, but I loved it! HA! I guess it's because the way it is sliced??

I LOVE poached eggs..with toast or a biscuit. Not the cookies. :~)
If I am very ill or have an upset stomach.....it's tea and toast or yogurt. Something very light.

If I am WELL and want "comfort foods".....it's mashed potatoes and or macaroni and cheese. HA!

I had a "bug" over Easter and I fasted (because I couldn't keep anything down in the first place) but I did drink liquids water/sprite...and eventually drank juice that I juiced myself after about the 3rd day....I did that for about a week plus total with a bit of soup...just trying to "detox" a bit and let my body rest.

I have never heard of the term Toast Soldiers but I think that it is an appropriate expression from the view of your breakfast which really did look delicious.

I love hard boiled eggs with a soft center eaten on my toast or poached eggs on toast which is similar. It's funny that you should write this post because I haven't had that in ages. Think I'll try it again tomorrow.

Our usual breakfast fare which we rotate is cold cereal with milk and bananas along with grapefruit juice and 1 oz of cheddar cheese for our protein. It makes your breakfast of start last longer in your tummy and will carry you throught the morning.

Then we have eggs and toast either scrambled or over medium (hard white, soft yolk) along with juice.

Another morning we will have oatmeal with brown sugar with the cheese on the side and yogurt and juice.

Another day, we will have grits, cheese, yogurt and juice.

We always prefer our toast to be whole grain rather than white and we change off on this from Rye to Wheat to Pumpernickle to Oat Bread.

Sorry for writing a book...you got me on a roll, ha! ha!

I must be the odd man out here -- I abhor eggs. I don't mind baking but boiled eggs, poached, fried etc... ick! don't even like quiche.

As for comfort foods -- i love a bowl of real mashed potatoes, with milk and butter, with some parm cheese sprinkled on top. That is what I want to eat when I'm sick.

Or whole wheat toast (brown toast in our family) with margarine and honey.

If I can't have that, than a nice bowl of rice with some butter and curry powder and maybe some parm cheese sprinkled on top.

When I was sick over the Christmas Holidays I ate scalloped potatoes and peas. That and peach juice was the only thing I could handle. Oh, and Ice Capps from Tim Hortons.

Good ole comfort food!

My comfort food is sour dough bread and strawberry jam with a cup of tea. It is something that I really look forward to.

My mother use to call them 'toast soldiers', I have not heard that for years.

Hello everyone, it has been so much fun reading about your favourite comfort foods. I have been sitting here thinking, yum, poached eggs, yum, sourdough, yum, mashed potatoes with parmesan -- you get the picture.

Thank you for sharing your faves with me!

Eww! I've never tried it, but I can't even take my scrambled eggs 'wet'. I like them browned, and just barely dry. I even freak out a little with eggs fried 'over-easy'... I always ask for them 'over hard'. I guess maybe the soft-boiled thing is a european or australian thing? I don't think it's a southern USA thing...

My favorite comfort food for the winter is Split Pea Soup, and in the summer... I guess it would be watermelon or Cole slaw - I love a good cole slaw!

Banana bread - definitely banana bread!

I love that new header. It just made me smile so wide. (Got a suspicious look and remark from hubby.)

Thanks River! You're the first one to comment on it. I love that lady in the picture -- such a classic example of female multi-tasking!

I dislike anything but egg whites ever since I cracked one and found a fertilized egg sizzling on my grill. However I make them for my children. You will be my son's new best friend forever when I make this.

Oh, now I'm hungry for some nice butter toast. Not fair.

I like the new header, by the way. And the retro graphic in your sidebar is wonderful.

Hi Kate! Yummy, a delicious breakfast with fresh juice. Is there anything better?! I think after the kiddos get off to school in the morning I am going to fix me a delicious bite to eat!

I'd have to say my favorite comfort food is homemade lasagna with fresh buttered bread! The sad thing is that I never get to have it because Audley detests pasta.
Enjoy your week,
Jen

My dad made me eggs and soldier boy toast when I was a little girl. My husband's grandmother made soldier boy toast for him too. We have wondered if it was a leftover trick from WWII (to make bread stretch further or if it was a Dutch thing since my dad and his grandma were both Dutch. Fun to see you mention it!
