This morning I awoke to a first-grader with a sore throat and croaky voice who was too sick to go to school.
He was not, however, too sick to help me bake lemon butter cupcakes. He helped mix the cake batter then decorated all the cakes. He also licked the spoons and bowls afterwards, as all helpers should do.
I made lemon butter because I was given a bag of lemons yesterday (thank you Cathy) and lemon butter - or lemon curd - is one of my favourite foods in the whole world. It's sunshine in a jar. I quadrupled Molly's recipe and made four jars, but I bet they don't last long.

Our little baby lemon tree is happily producing lovely big lemons right now. Finally. After a few year of not much at all.
I think I need to make lemon meringue pie. And then maybe lemon butter, because like you, it is one of my very favourite things.
Hope your little fellow is feeling better in no time. His smile is as sunshiny as lemon butter, so I hope it's not dimmed terribly by his lack of health.
Lemon curd is so yummy, I've only had store bought though. I am going to check the recipe and see if it is something we could give a go to.

Sounds delicious, Kate! I would love to have your recipe as we have our first lemons growing this year. It wouldn't last long here I am sure, but well worth making.
I hope your little one is feeling better. Sometimes I think mine "feel" bad just for the one-on-one time with mom.
